When you learn you need to avoid gluten, it's time to educate yourself.
It's estimated that 1 in 133 people are intolerant to gluten. Some manifest in Celiac Disorder, some in autoimmune disorders.
It's time for a 'real food' world.
My new motto, 'If it won't rot, don't eat it!'
Finding out that you are intolerant to gluten and casein can be a sudden surprise or confirmation of gut intuition. Either way it represents a major lifestyle shift if you want to lead a healthy life.
Northern California has fabulous scenery, great recreational opportunities, abundant wildlife, low population density, and a wonderful lifestyle. What it doesn't have is a coordinated list of resources for those of us who find ourselves leading a gluten-free life. In my case it's both a gluten and casein free life.
My objective is to share the information I've discovered in my own search for health, may it be research, recipe sources, shopping tips or local restaurants.
I've also found that I, personally, do best on a PALEO diet and information about this approach to healthy eating will be included.
